Pumpkin and carrot soup is not only healthy, but leaves a taste that you will surely want to try again.
My husband is just crazy about this soup, I don´t know how many times I have mada it 🙂
Half of a pumpkin (medium), two large carrots, two potatoes, one onion, one piece of garlic, pepper, salt (a piece of ginger – optional) cooking cream 200ml. Pumpkin seed.
Slightly on the dice cut pumpkin, onion, carrot, potatoes and a small piece of ginger. Fry on oil for a few minutes with a little salt and pepper. In the meantime, boil 700ml of water with two tbsp of vegeta. Add boiled water to all the ingredients we fryed and cook for half an hour.
After half an hour, mix everything with a mixer to create a nice dense mass and add the cooking cream to it then continue to cook for another five minutes with a little spoon mixing.
When the soup is finished, serve it with pumpkin seeds that we have fryied for a few minutes in the pan. (You can decorate it also with pumpkin oil if you have)
